Australian Inn began as a riverside gambling hall with forty rooms. Nearly three decades later it is a full resort — two towers, six restaurants, a spa and a casino that never really sleeps. This is how we got here, and who keeps it running.

The floor opens

1997 — A card room with ambition

Forty rooms above a gaming hall on Whiteman Street. The poker tables paid for the first tower; the regulars named the place before we did.

The first tower

2004 — West Tower rises

Twenty floors of river-view suites and the city's first hotel pool cantilevered over the promenade. Locals came for the view and stayed for dinner.

2013 — The dining precinct

Six kitchens, one philosophy: Victorian produce, treated seriously. Two chef's hats followed within eighteen months.

2026 — The full resort

A second tower, a rooftop helipad, a nine-metre wine vault and a spa circuit guests cross the city for. The card room still exists — downstairs, table six.

The Botanical Almanac

Sixteen hundred plants, one obsessive gardener

The terraces and the riverside walk are planted with species that belong here — and a few our head gardener fought the climate to keep.
